I have heard the queen has quite a temper and she stamps on top of letters quite a lot. Especially the ones from which the content does not have her immediate approval.

No, to send letters through the post all Her Majesty has to do is put "ER" (for Elizabeth Regina) in the corner where the stamp would normally go, however, although these could technically go in the normal post they don't for fear of souvenir hunters keeping them.
All the Queen's personal correspondence is dealt with by courier.

Postage is paid, and a very private system is used for the very lager amount of post that she gets. and sends, and of stamps are not used, everything is done by the huge amount of staff

I wrote to her in 2000 and had an immediate reply from her Private Secretary. lt had a frank with 'E II R', not a postage stamp on it.

If Elizabeth doesn't carry any money in her purse, she probably doesn't mail her own letters, either. Presumably, HRH hands them over to an equerry, who takes care of the postage.
Incidentally, according to a recent biography about Princess Diana, William and Harry referred to pound notes as "grannies."
