William Landay is wonderful - look out for The Strangler and Mission Flats
Michael Connelly - any of the Harry Bosch novels, but Echo Park is great. Also The Poet is a classic
Jeffery Deaver - The Bone Collector is marvellous, as are most of the Licoln Rhyme novels
Jim Thompson - possibly the greatest American crime writer, The Killer Inside Me is incredible
Walter Moseley - Always Outnumbered, Always Outgunned and Devil in a Blue Dress are amazing
Chester Himes - the Harlem Quartet
Sue Grafton - A is for Alibi and any of the alphabet series
Patricia Cornwell - Postmortem. Don't bother with the rest of them, but make sure you read this one.
George Pelecanos - Nick's Trip is excellent
James Ellroy - American Tabloid is essential reading
Joseph Wamburgh - Hollywood Statiom. A copper bottomed classic
Anything by Peter Temple
Hope this helps

In addition to the excellent suggestions already posted, which I won't repeat but endorse, I enjoy the Alphabet series by Sue Grafton. I also like the Sub Rosa series of Roman novels featuring Gordianus the Finder, written by Steven Saylor.

Almost anything by Edgar Allan Poe, Dashiell Hammett, or Raymond Chandler
Pudd'nhead Wilson by Mark Twain (one of the first novels to use fingerprints to solve a crime)

Raymond Chandler and Dashiell Hammet are at the top of list not so much because of their ability to write crime fiction, but simply because of their ability to write. Both are first and foremost authors. They just happen to write great crime stories. Chandler is especially wonderful in his descriptions of setting and character. He uses simile and metaphor in totally innovative ways. And he is funny as hell, without being either cute or crude. He is just an intelligent author who knows how to paint word-pictures.

Tony Hillerman. His detectives are Navajo tribal police and the novels feature both current methadology and traditional skills such as tracking together with an insight into native southwest American cultures.
