I am mounting a luggage rack/backrest to my 1993 Honda 750 Nighthawk, it came with no hardware. Do I need longer rear shock bolts? Do I have to trim cowling for rack to fit properly? How much trimming is required? Does the trimmimg affect appearance in a negative way??

Without seeing the rack and it's mounting hardware all I can help you with is a picture.
I can't see what supports the rack in the back of the seat.
Can you contact the manufacturer of the rack and ask for directions and a hardware kit?

Edit
Look in the area of the backrest where it meets the rack.
There should be some kind of mounting holes.
Remove the seat and look in that area of the bike, especially under the side of the cowl.
I seem to remember that part of the cowl had to be trimmed to fit the mounting bracket.
Everyone I've installed looked factory mounted.
Just take your time and go slow.
"You can take off, but you can't put on."
I use that line when deciding how much to wear in cold weather. I think it works here to.
