There are dozens of cameras that NASA has focussed on a rocket during launch. There are cameras on the gantry (the tower that holds the rocket up), on the ground around the launch site and several that track the rocket during its ascent. All of these feed into Mission Control. If you get a chance, watch a Shuttle Launch on either NASA TV or on the Internet and you will see all of the different views that they have available.

Yes they have a huge screen in NASA that is focused on the shuttle, they also have radio contact with the Launch Controlers in Florida...

NASA has its own satellite channed that is nothing but 24 hours of NASA. There was netwrok coverage of launch

You can bet that when hundreds of millions of dollars are riding on a precisely controlled launch of a gigantic vehicle, they are watching with many video cameras, and even more telemetry instruments.
