Grilled Raspberry Chicken

• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)

Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.

Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

You could make chicken pot pies. That uses your potatoes and chicken. You can buy the Jiffy Pie crust mix and shape it into little shells (put them in a muffin pan) for perfect lunch-size pot pies.

I usually chop the chicken into small chunks and then cook it in a pan with melted butter, chopped potatoes, leek, salt and pepper. Once everything is cooked, add in gravy and fresh or canned peas. Then all you have to do is ladle it into the shells and bake as indicated on the box. The nice thing about doing it this way is you can test the filling for taste before you cover it up in the crusts and since all the meat and veggies are cooked already, you don't have to worry about the center being raw or cold after it's been cooked in the oven.

You might get a better response if you post it in the Cooking section, instead of the Movies section......
