Because despite being all joined together, everyone lives apart, not together with the neighbours.

The word comes from the French appartere "to separate". Each living unit is separated from the other, unlike a large house or building with many rooms but common bathrooms, kitchen, etc.
The study or word origins is called "etymology"

Why is this question is zoology?

The origin of the word is from the Italian 'appartamento' and the verb 'apparta(re)' meaning 'to separate' or 'to divide'.
This would suggest that it means to separate sections of one building where people would be living.

i don't think this question of yours is linked with zoology well apartments because boundaries are there to apart one from other rooms
