In a tank of Shrimp and Snails, what are very small, long, white animals? Oh, and they slide along the glass.

Planaria worms.
They are parasites and to keepers, this is a sign of water that needs to be changed and gravel needed to be washed out.

Probably planeria, but may also be the larvae of a small fly or midge. In either case they are harmless to the aminals and as mentioned above are a good indication that the water probably needs changing. When changing the water be sure to clean the gravel well and you will remove many of these worms.
