Most professional swimmers have their own nutritionist to help them create a nutrition plan that will most effectively nourish their bodies while training, tapering and recovering.
In fact, most non-professional competitive athletes have nutrition plans established by trainers or coaches as well.
I'm not a professional but during the season I take in 4500-5000 calories a day on a very specific plan to help me maintain my weight and lean muscle to fat ratio. My plan was developed with the help of a nutritionist in my doctor's office to ensure that I don't throw any of my bodily chemicals off balance or hit any walls during my training sessions due to a nutritional imbalance. It is very important to tune your nutrition to your training, otherwise you risk creating problems in your body that could include hypo and hyper glycemia, anemia, insufficient caloric intake, insufficient protein intake, insufficient fat intake, electryolyte imbalances and vitamin deficiencies, among other things. These imblances can lead to lethargy, fainting, dizziness, vomiting and other negative side affects.

Swimmers have a food plan not a diet. The food plan is what their coaches set out for them with help from a dietician.
