Tequila is basically made up of water, ethyl alcohol, blue agave and whatever other flavorings. Tequila is 70-110 proof, meaning it is 35 to 55% ethyl alcohol (ethanol) and the rest is water. Pure/almost pure ethanol (Everclear is 95% ethanol) freezes around -114 degrees Celsius (-173*F), whereas water freezes at 0*C(32*F). With most home freezers only getting as cold as -10*C, the ethanol in tequila prohibits it from freezing. Some liquors a lower alcohol content will sometimes slush in a really cold freezer. That means the water in the liquor froze, but the ethanol in it prevented it from completely freezing.
