Steve Vai. He does a little bit of metal, but he's mostly rock. He is easily the best guitarist on the planet, no question. All of his music is brilliantly composed and orchestrated. He isn't afraid to take risks, his sound is brilliant and he goes all out. He has more than plenty of ear-friendly songs, but a good deal of his awesome stuff is a little unique, but that's what adds to his brilliance.

The best metal guitarist is John Petrucci from Dream Theater.
