I always see those kinds of phrases, and i was wondering what it had to do with Australia. Could someone explain?

Because Australia is under the world on the globe.

When you look at a globe or map depicting the earth, north is usually depicted as being up and south as down. And Australia is located in the southern hemisphere- that is, south of the equator. So, Australia is referred to as 'The Land Down Under'.

when you go to Austrailia or any place south of the equater, you are going under. on a map you a below the equater there, hence going under

it's just terminology, and it's down under, as in Australia is down underneath the globe.
I think it derives from European travelling to Aus, ie, they were going down under
