Very rare. Almost raw, but super well done on the outside. (This is really good when it's fillet mignon. ) And a glass of d@mn good red wine to go with it.

medium rare.
one summer when my father made them he didnt cook them all the way for some odd reason, and as soon as you bit into one, blood gushed out of it. he put them back on for about ten minutes.
