Well, scientifically speaking, you're batteries 'run out'-- you're body and functioning starts to deteriorate. that's the WAY we die, but as for reason it depends what you believe I guess. There are many many theories out there to explore, if you really want to know this site probably isn't the best. Most answers will refer to christianity or science, as there are a lot of right wingers on here (haha, if you haven't noticed) or short blunt answers that you've probably already considered.

Because all things are impermanent. In the words of Ajahn Chan:
How can you find right understanding? I can answer you simply by using this glass of water I am holding. It appears to us as clean and useful, something to drink from and keep for a long time. Right understanding is to see this as broken glass, as if it has already been shattered. Sooner or later, it will be shattered. If you keep this understanding while you are using it — that all it is — is a combination of elements which come together in this form and then break apart — then no matter what happens to the glass, you will have no problem. Similarly, the body is like the glass. It is also going to break apart and die. You have to understand that. Yet when you do, it doesn’t mean you should go and kill yourself, just as you shouldn’t take the glass and break it or throw it away. The glass is something to use until it falls apart in its own natural way. Similarly, the body is a vehicle to use until it goes its own way. Your task is to see what the natural way of things is. This understanding can make you free in all the changing circumstances of the entire world.

We die because no "higher" animal on earth has evolved immortality and we came from a primate ancestor.
We die at a certain time as a result of our genetics and our environment.

Think how many people there would be by now if we didn't!
As to why we die at some given time, well, that's decided on a case-by-case basis.

We are born, we die; what we do in-between is whats count. We all will die sooner or later, and hopefully we will learn.

Basic biology. If we get too damaged, we die. That damage can come from trauma, disease, or wearing out.
And when that happens, you're all done.
So be nice the first time around, you won't be back.

it is inherent in the nature of life.
all things die, plants, animals, suns.
we are an animal. animals die.
it is the pattern, the nature of life.
things do not exist forever.
it is just the nature of the universe, reality.
