The meat itself is ground for fish foods (mostly shark) that is to say they did not die of any specific illness.

The bones are also sold to China and Japan for use in their medicines.

That's a good question. I imagine that there would be an autopsy to find the cause of death, particularly to advance the health of other marine mammals that are kept in captivity.

The actual answer may depend on where the animal is (which country). the whale once it dies go to whale heaven lol =].
nnaaahhh they sell it 4 there blubber which goes into chewing gum ect and then the carcass is burnt and disposed of.

Autopsy if sudden, if expected due to age, I should imagine in both cases they incinerate the remains.....

They probably feed it to other fish, throw it back into the sea, or mush it up for chum to use for fishing bait
