My favorite psychology professor LOVED this question. His answer? We can't, so we drink instead. ;)
Generally speaking, the consensus is that behavior is the proper object of study in psychology. However, there are other schools of psychological thought-- according to the psychoanalytic approach, we study the unconscious mind through the process of analysis. Biological psychology purports to understand the mind by way of its physiological processes. Cognitive psychology emphasizes the study of the thought processes which lead to certain behaviors.
Are you getting the picture? :) There are many ways to approach the study of psychology. The method of study is generally chosen according to the purposes of the research.

We cannot see electricity or radio waves or apathy, but we do study it - we cannot often see the cause, but we can see the result (hopefullty) and thus study it.

Psychology is all about human behavior... and we can truly see human behavior, it depends on us what we really want to see or not.

Just cause you can't see it does not mean it is not there. Hmmm...I wonder how all these years we have studied things like air and different gases.
