Horseback trail ride at Fort Wilderness
Water skiing, kneeboarding, wakeboarding, and tubing at Sammy Duvall's Watersports Centre at Contemporary Resort
Mickey's Backyard BBQ at Fort Wilderness
Surf lessons at Typhoon Lagoon
Bass fishing expeditions from Contemporary or Fort Wilderness
The Segway tour at EPCOT (mentioned above, but it is THAT cool, so I thought it deserved a second mention)
Stories at the fire pit at Animal Kingdom Lodge every night
Canoe and paddle-boat rentals from Fort Wilderness
DisneyQuest - Big arcade in Downtown Disney

I've been there a bunch of times too. Everytime I go with my family and the past time my mom got this guide book just from Barnes and Noble and it had all sorts of great ideas and tips to do for any age group you may be with. Like the person above I have always enjoyed trying to find new Mickeys but I'm entertained pretty easily! =)

They do have a behind the scenes tour. Ask your travel agent or the Disney people about it. I also recommend the book, "Unofficial Guide to Disney World". All sorts of tips and lesser known things to look for.

For the entire month of October, the Magic Kingdom holds Mickey's Not-So-Scary Halloween Party on select dates after regular park hours. You'll get to meet characters dressed in Halloween costumes and have all sorts of fun. You may have to spend a bit extra to attend, though.

try going to allears.net and looking at the stuff that they have. Also. If you have The Travel chanel, (188 where I am) They always have a BUNCH of stuff that goes behind the scenes at Disney and gives you good ideas! Have fun...I will be there Feb 8th! WOO HOO!

There are a couple of backstage tours you can look into, Keys to the kingdom, steam trains, and they also have a segway tour of EPCOT, I have done the Segway tour and it was a ton of fun!!
Also have you been to the Adventurers Club? Disneyquest? Minigolf? Water Parks?

When The Magic Kingdom first opens go straight to Tomorrowland and ride the TTA. You can see Space Mountain with the lights still on!
