Surely someone has done this before but I especially need help with the typography and knowing which Windows fonts are equivalent to which Mac fonts and so forth. I've also noticed that deep maroon fonts seem to look more reddish so what are some things like this you've picked up on. I can only occasionally view them on a Mac and can't sit there and tweak them like Firefox and IE on Windows so it's a pain.

As far as colors go, you might try sticking to the "browser-safe" palette: http://primeshop.com/html/216colrs.htm though it's possible your problem is simply that different monitors display things differently.
