WOW! I am 6' and 250 so you may need bigger yet It takes a 1 liter bike to move me freeway speed. I would reccomend the 1300cc Kawasaki Or big Road Star Yamaha. Move right up to the finishing bike smaller engined Bikes just wont fit and comfort is important while riding. Please take a rider saftey course. Helmet and boots leathers chaps really help if you ever have to put one down. American Iron Horse can build you a custom bike just for your size also.

It all depends on what kind of riding you like. If you like cruiser bikes, then pretty much any 800cc cruiser would do. If you like sportbikes, then I'd start off with at least a 600cc. Sure it may be small (considering your weight), but its not how fast you go, but the skills you learn, that will make you a good rider. Besides, the 600cc class these days is more powerful than it used to be.
You also will need to adjust your suspension in order to accomodate your weight. This is a normal thing to do on any bike, especially if you want it to react properly to the many road conditions.
As for specific bikes, if you stay with the 4 leaders (Honda, Suzuki, Kawasaki & Yamaha) you can't really go wrong.
Go to a bike show or dealership and sit on a few bikes. Then you'll know which one fits you. Do the research and go from there.
Don't forget to take an approved safety course.
Ride safe!

I am 6' feet, 250 pounds and counting. I bought last December a gently used BMW 1200R Euro and I had about 20 years that did not ride a bike (if you call a 70cc Honda a bike). It took me about a month to get comfortable with the bike. I rode the bike in the winter time around my neighborhood to get familiar with the controls, the weight and the handling of the bike before I took I95 and I80.
Because I am a keeper, i decided to get a bike that would last for a very long time without having to make any significant changes to the bike or having to go through the ordeal of buying a new bike. I believe it doesn't make a lot monetary sense changing your bike every two or three years.
My 1200 CC is a great bike. I never pass beyond 80 miles per hour but in the few cases where I had to go faster my BMW had plenty more for me I just have to grow the balls to follow my bike :)
In a nut shell, I will suggest you to get the biggest bike you can afford or the bigest one that adjust to your needs and comfort and stick with it. After all motorcycles in this climate zone are gently used, in general, and it should last you a life time.

Most likely a Honda 750,,I've been riding for 30 yrs and started with a low cost Honda and worked my way up..For a Guy your size a 750 would fit you about right,but remember that there is a bit of power under you..I would say ride it for a few years and get used to it and go from there..

My dad is about your size just alittle shorter. He has a Honda Sabre 1100 and it's perfect. It moves him very well, has plenty of power, and looks nice.
