my Gf is british, and she often comes to visit me as I am studying here, but i was told that she could overstay and leave without the customs officers knowing about it, like a loophole. As long as she doesnt work or do **** that gets her arrested. Is that right?

No that isn't right, if she overstays her visa it will show up on the computer. When she comes for another visit it is likely to show up. If that is the case, she can be arrested or more likely just sent back on the next flight.

Cutoms is checking these things lately, you will be getting her into trouble.

No ... there isn't any allure your are out and banned for an overstay if its over 6 months ... nor are you able to ever use the visa waiver again ..you may want to video show for a B-2 ... you wont get it for sure
