There used to be a "pinch" test, where they pinched different areas of your body (stomach, back of arm, etc.) with a special instrument that measured physical resistance, and looked up your BMI on a chart.

Now a days, a device that sends a small electric current through your body is used, as one guy above has already said.

They can use a mild electric current. Since fat conducts electricity differently than muscle, they can determine the percentage of fat. There are bathroom scales that can measure this, but they're expensive.

Yep, indirectly.The old method was immersion in water , to measure buoyancy . I've heard of other, more recent methods, but don't remember it . ( *^&##&**!!! concussions! ;D)
