I'd like to know this either as a total or per holiday (major holidays).

Impossible to say. You can try asking numerous online e-card providers about it, but folks can also make up their own cards at home, save them as some kind of picture file (or with something like Print Shop, as a different type of card file), and e-mail them. Then you've got the question of how many folks are going to be sending out e-cards and to how many people will they be sending them to.
