In no particular order:
Bridge Over Troubled Water - Simon and Garfunkel
The Joshua Tree - U2
Dark Side of the Moon - Pink Floyd
Desire - Bob Dylan
Hard Nose the Highway - Van Morrison
I don't wish to sound cynical, but a lot of great albums such as Sgt Pepper, Abbey Road etc. are let down by filler tracks. I like a fair amount of current music but the filler syndrome seems to be getting worse. Snow Patrol, Feeder and so on have some great tracks but no killer album in my view.

What an awesome question.
Well, I've been through many eras, appreciating many genres, so I hope you can see the logic in my choice. The important thing is the music, right? Music is a personal taste thing but you have to appreciate it from an artistic point of view.
5: Bullet For my Valentine - The Poison --- Because I listened to every song, over and over, for more than a year. And this was long after I had "grown out of" metal. I defy anyone not to like this album.
4: Stiltskin - Inside --- Introduced me to heavy music, a rights of passage for a teenage me, while everyone else was obsessed with "Nevermind".
3: Jamiroquai, - Original, funky, just very very different. A classic collection of singles with some extremely quality filler.
2: Ill Nino - Revolution, Revolucion --- Ok, I'm not a total metal head, but this album is so good all the way through.
1: Red Hot Chilli Peppers - Californication
Yes, This album may have controversially turned RHCP into a bunch of softies, but to me, it was a mind blowing transformation that showed us all what brilliant musicians they all are, and was absolutely exhilarating to listen to. Nothing they have done since has compared.
