There are several different methods.
With metal-tanned leather, the letters may be impressed with an adhesive and coloring. A special machine is used for this. This is how names are usually imprinted on the outside of bibles and on Velcro-backed leather name tags on military uniforms. This looks really professional because it is really professional.
With vegetable-tanned leather, it is possible to heat-burn lettering. There are machines similar to the one previously cited and there are hand-held wood-burning tools that will also work for this. The hand-held ones aren't normally used for professional lettering.
With un-sealed vegetable tanned leather it is common to dampen the leather and then smite it with lettering dies, either ones intended for use on leather or those intended for use on metal (pre-clean ones that have been used on metals). When properly executed the force of the smiting will permanently darken the stamped area. This is from the heat generated by the force of the operation. The leather needs to be "sealed" after this operation.
With skill and practice the last variety can also look really professional. Without skill and practice, it will almost always look amateur or crude.

There are several ways of imprinting letters on leather. If the leather is already finished then a press with heated letter blocks and a special film put between the letters and the surfaces would be used.
If you are carving leather before the final finishing stage, for example if you are using russet, you can wet the leather and use an embossing tool. With this method you get the tool, put it where you want it, and whack it with a wooden mallet. A variety of dyes are available to colour the leather afterwards. This is normally done before the finished piece is made up.

Go to an auto store and buy some leather cleaner that you use for the interior of your car. I think they come like wipes so you can just wipe your wallet or purse off.
