What postings does a small business have to have on its premises in Orlando, Florida?

I receive these official looking announcements in the mail that if I don't purchase I may "be fined." And I've had some sales persons trying to insisit that I have certain postings or else I may get fined. Is this true? And if so where can I get a list of the needed postings? (I imagine these may include " employees must wash hands afetr usuing the restroom).

Yes, there are certain things that need to be displayed, but it varies from city to city, etc. Check you're state's website and look for the BUSINESS link. Also, check the county clerk's office at the courthouse.
