Attention. The least subtle of the five senses of perception.
To ensure focus on a subject; the phrase "all eyes on
" would be out of place if any of the other
perceptions were substituted because focus couldn't
be observed. If you asked what does "sight" or "vision"
symbolize then I might have discussed information, but
the "eye" is only a physical receptacle for observing
physical objects. Therefore, the eye symbolizes observation,
but not necessarily how much is observed. The physical
eye might be known to be in focus, but is the mental
eye decoding and interpreting the information properly.

Edit:

I noticed a few answers mentioned that the eye is the
window to the soul. I do not believe this to be true.
The mind is too complex to be read by the simple
configuration of the physical properties of the eye.
Any number of factors could attribute to the physical
orientation of the eyes. For example, individuals known
as high-responders might respond as if guilty(perhaps
through nervousness) of something regardless of their
involvement.

To me the eye is the window of the soul. Some people have kind eyes, some have cold, cruel eyes. I think you can tell a lot about a person if you make eye contact while you speak to them. Some people are afraid to make eye contact, as though that would let someone into their soul. For some, it may be a sign of shyness or distrust, for others it's fear or guilt if they have something to hide.

I think eyes are beautiful. They are the first things I notice on a person. When my boyfriend and I met, we felt an instant connection when we looked in each other's eyes. It was love at first sight. He said it wasn't just that I was beautiful but that he could see the being shining behind my eyes was beautiful. I felt the same way about him.

The eye also symbolizes knowing, a sixth sense, the spirit. I remember being downtown once & a very aggressive street vendor was trying to sell me a necklace with a big eyeball in the middle. "Are you sure you don't want the eye? The ALL-KNOWING EYE?!" it was kind of creepy but funny. Maybe he knew I have a thing for eyes...

The curious image is most often referred to as the all seeing eye or "eye of providence." The eye, usually depicted in the sky looking out upon the earth, is an ancient symbol of the sun, and historically has been used as a symbol of omniscience. The idea of the solar eye comes to us from the egyptians, who equated the eye with the deity Osiris; the human eye in its ability to perceive light was viewed as a miniature sun.

The use of the eye emblem to represent God was quite common in the Renaissance; often, the eye would be enclosed within a triangle representing the triune godhead. Such an emblem can be found in numerous examples of Christian art.

This emblem was eventually adopted by Freemasons as a symbol for the Great Architect.

A version of this symbol, elaborate onto the capstone of a pyramid (perhaps in a nod the symbol's origins in Egypt) forms part of the Seal of the United States, accompanied by the slogan, Annuit Coeptis , "It (Providence) has favored our undertakings."

Not sure what you mean by this.....when someone gives you the eye.....the Greeks call it the Matti the evil eye, the Italians call it the Mulorka I know I am spelling it wrong hahehe....

If there is meanness in the eyes there is mean-ness in the soul. I remember meeting someone and I took his picture covered his face and saw his eyes were lost, dark, sad.....the face was smiling but the eyes of the soul were not happy...........try looking at a picture of someone and cover there face and just loook at the eyes you can see so much without even having to get to know that person better............... Enki what is Dpes mean???

As in the "Eye of Horus" or third eye, or "if thine eye be single you will be filled with light??"

It represents clarity of perception - unencumbered by learned ego misperceptions related to survival and defensiveness based on 'sensory' (two eyes) input alone.

its a door to go outside
its a door to come inside
come in and close the door
stay there for a while
to realise yourself-the whole outside-the total existence
open the door and go outside to express yourself
the very purpose of the life is served, when you express yourself in context to totality.

whatever, it's true. deal with it.

every other answer to this question that has been posted here speaks of a cypher for a phallic symbol. they've just been trumped up with flowery language so they sound 'nice'.
