If you are referring to video image quality, I believe those pixel shaders or stream processors are not that relevant. They are mainly utilized for 3D graphics acceleration.
For video, it is really the internal video processor that does the work. If you are trying to compare the video quality from the 8600 (32 SPs) vs the 7600 (12pixel pipes), read more about it here:
