maybe it has something to do with the lack of control we have over our eyes. like, we can move it in all sorts of directions, but that's basically all the control we have over them. everything else is automatic. and when we get really emotional, we lose control over so many things, and because of the little control over the eyes, that is the first one to show differences.
that probably didn't make any sense. just my train of thought. ignore me.

A large number of biological reactions go on in the human body when there is a stressor induced such as lying. The eyes are called the window of the soul and they can actually change during stress or lying. Pupils may change, eyelids open or close more than normal, no direct looking at you etc. The rest of the body is reacting to this stress also. Body language covers a lot of those ranges of movement. The electrical impulses to the skin surface change, breathing changes. All of these reactions to stimulus are also recorded on a Polygraph machine.
The eyes just happen to get noticed most because when you ask someone a pointed question, you are usually looking them in the eyes.

It's more than the eyes. It's the look on the face, it's the body posture, it's the movement. The eyes are just one way of looking for a person's emotional state. Sometimes the eyes hide it very well also.

Don't they say the eyes are the windows to your soul? I believe it is because our eyes are the first means of communication we develop, other than crying. So it stands to reason that after so many years of practicing this communication method it would become highly developed. I don't know for sure, but it makes sense to me.

because we no longer have enough hair to stand on end, when we're frightened, we give our mates that info through our facial expressions, etc. MOST females do not have facial hair, they needed a way to alert males to danger and I doubt we've had intelligible speech for long. Come to think of it, many humans still lack the knack for verbal communication. There you go, it's an "early warning system"!

Because it's the reflection of the body and soul. We see happiness, sorrow, joy and so on through eyes and not body.
