Well, Ive worked on a lot of mobile homes over the years, and Ive seen a lot of different ways this was tackled....

Cement board/panel screwed to a frame of timbers -- gives the look of a poured foundation
"Z brick" - fake bricks applied to cement boards and screwed to a framework -- the fake bricks can actually be applied before or after installing the panels.
Stone - real or 'man-made' - same method as mentioned above.
Plywood - this is probably the worst method to go, in my opinion - first, cost of plywood has skyrocketed in recent years, and it doesnt last as long as cement type products, when in contact with the ground or moisture.
NovaBrik -- this is actually a mortarless brick system... very nice, lots of options, but it does cost a little more.
Cement blocks -- either the old "cinderblock" standby, or the newer products that are used to build outdoor retaining walls, etc.
Ive also seen a large variety of vinyl products with different designs... not just the most common variety of the standard "trailer skirting"... everything from the look of cut limestone, to landscape rocks, etc.

Building supply stores, landscape suppliers, etc... are good places to start shopping -- take an idea and do online searches....you will find something you like. :)

Have Fun

We used tin that has a block design on it so if painted, it looks like concrete blocks stacked up. It comes in sheets, easy to put up, won't damage by flying rocks, etc. from mowing and last forever.
