My mother-in-law is 94, she has lived in this apartment for 20 - 30 years.
She fell through a glass panel in the lobby.
After going to the hospital, we got her into a senior's residence.
This took two weeks.
Her former landlord is now demanding 60 days notice.
Her pension is signed over to the senior's residence now.
The apartment is empty, how do we get them to back off?

The first thing that you need to do is review the lease very carefully and see if there is anything in it to allow this. It may be that if she was ordered to the seniors residence by a doctor for medical reasons it might supercede the lease. She didn't break the lease, she was ordered not to complete it for health reasons.
Another item might be that after the fall she became disabled and the apartment didn't meet the ADA "americans with Disabilities" act. You may need to ask a realestate lawyer.pp

There may not be a way. Look over the lease and see if there is any clause that allows this. In my experience, the only way to get out of the lease without notice is death or military deployment. Talk to the landlord and see if there is any prorated amount you can pay until the unit is rented out again. If the place is empty there is no reason that it cannot be put up for rent asap.

Call a lawyer. She fell through a glass panel in the lobby.

I can't imagine they'd rather go after a pensioner for two months rent than avoid a lawsuit.

Find out ther is a Tenant/Landlord Association in your area. If there is, call them. They specifically deal with situations like this.
