There's just too many .....
One of them is Zappa's "Sexual Harassment in the Workplace". No singing, just Zappa playing his guitar.
An amazing piece considering it's recorded live.

David Gilmour's solos are right up there too.
Angus Young, Kirk Hammett, Eric Clapton , SRV , Hendrix ...
so many to choose ....
I'm not a big fan of Van Halen though ... too many notes,
not enough feel.

I agree with the comments about Dire Straits and David Gilmour. However, just from a personal standpoint, my favorite guitar solo is Terry Kath's in "25 or 6 to 4."

Kath, I feel, is one of the great under-appreciated guitarists in rock history. I read an interview with Jimi Hendrix, once, where he called Kath one of his favorite guitarists he likes to listen to.

To me, his solo on "25 or 6 to 4" is musically perfect. While it's not the most dazzling virtuoso display, it does rock, and it as much an essential component of the song as any of the verses. It's not just a solo for the sake of sticking a solo in the song.

So many of the guitarists of the past 20 years are all sizzle and no steak. They're flashy, but not musical.

The most popular one of last century was Eddie Van Halen`s in `Beat It` by Michael Jackson.
I like Zakk Wylde`s solo in `No More Tears` by Ozzy Osbourne.

your three choices are right up there on my list, But i would also have to say damn near any solo from Carlos Santana
and also a huge number of Solo's by Alex Leifson of Rush.
Let me say bravo for not going with Any of those flash guitarist's from the 80's and 90's ie. Satriani and the like.

La villa Strangiato by Alex Lifeson because it is truly a masterpiece, Cinnamon Girl by Neil Young because he has the audacity to play a one note solo, Yours is No Disgrace by Steve Howe and These are the Days of Our Lives by Brian May.

Yeo have to agree Estranged by GNR has the Best Guitar solo by far it's absolulty haunting.. I get lost in the song everytime I hear it!!

This comes from a slightly biased opinion since I think he's the greatest guitarist in rock history but I'm kinda partial to Randy Rhodes' Suicide Solution. Rock on!

Eddie Van Halen on JUMP is my favorite though i also agree with Sarah C about David Gilmour.
