I think that Animal Kingdom is a little more fun, as far as everything there is to do. MGM is good as well, but I like Expedition Everest, Kilimanjaro Safari, Kali River Rapids, etc. At MGM I like Rock'n roller coaster and Tower of Terror and the others are fun, but I find I like more at Animal Kingdom.
Also, of the two rides that you are wanting to ride, I think that Expedition Everest is definitely the better of the two, it is a great ride.
I'm not sure if the reason you are only going one day is because you are short on time or short on money. However, if you are able to spend a little extra, you may consider adding on the park hopper. It costs less than admission again, but, it would allow you to go to MGM when you finish at Animal Kingdom. If I were you, I would do a one day hopper pass, then go to Animal Kingom in the morning, get a fast pass for whichever ride you choose, then ride the other rides you want to see there. After you are done at Animal Kingdom, hop on the bus and head over to MGM. You could probably get everything you want to see done in one day this way. I'm sure you don't want to see everything at the parks (if you do just ignore this idea) and that way you could see the highlights and skip the rest.... That is what I would do, if it were me.

Ok to start off, I use to work at Disney World until the end of last year...I have always advised people to park wherever it is staying open the latest (if you have a park-hopper).
But for you, those rides are in 2 different areas, MGM and Animal Kingdom...
Most hotels offer bus services to all the parks, just ask for schedules and keep an eye on the time...
MGM has fewer thrill rides (2 to be exact)..Rock'n Roller Coaster and Tower of Terror after that you will be faced with boredom and repeating the same rides.lol.
Animal Kingdom also have a few--Everest and the Dinosaur ride, etc..its a lot more to do there though...its the only park i could never get tired of. it even has a kiddie area...and u have to see bugs life.
Back on topic:
I suggest Animal Kingdom---due to the fact MGM gets boring
But instead of worrying about parking see if your hotel offers transportation to these places first
Oh if you would like to get in both may i suggest taking a tour (there are places set up all over orlando for that)... all you do is have someone look at time shares, listen to the person who want to sell it to you and tell them no, no, and no, it will sound really good and cheap but stick with no, then you can buy a really cheap tickets, usually up to 4...so get more adults into it, its an idea i know pleanty of people who do that
---I did it for dinner-shows and universal tickets, so its worth a try
Oh and EAT FIRST AND PACK FOODS...lol $$$$

If you can only go to 1 park, go to the Animal Kingdom for expedition Everest. I am a Florida resident and have been to all the parks several times. Animal Kingdom is larger than magic kingdom and it's parking lot combined. This park is only open from 9 to 5 or 6(depending on time of year) each day. You must get there when the park opens. Head straight to the safari located in the African section of the park. It is in the back corner of the park. The reason to go on it first is you will see most of the animals. It is early enough that the animals are active. The safari has animals that appear to roam free. The predators are behind "secret" walls to protect their natural prey. You may have giraffes come right up to the vehicles. Don't miss the shows either. If you do not like animals, this will not be the park for you.
MGM is my families fav park. We like the entertainment. We will go during Star Wars weekends.
It's too bad you can't get a park hopper. It is very hard to choose just 1 park. Have fun when you go!

Expedition is in animal kingdom, rock'n roller coaster is in mgm, being a resident of florida I have been to disney many times, and it just depends on your age really. I would definately not suggest MGM, roc'n rollercoaster is definately the ONLY thing worth even getting on at mgm. Although the rock'n rollercoaster is frickin sweet. If you cant get park hoppers like I do then MGMs probably not the best place to go, all the other kingdoms will keep you entertained for hours, even days, you may actually get bored in a day at mgm.

Ok well if you got all plan... is a though one. I always gone to disney for free and last year and this one we will be paying. So we always get the park hopper cause all together makes the disney experience one of a kind. That's why I never recommend going to one park cause you'll get bored and you'll think hey disney is pathetic. You know I have friends who got bored and they were probably bored cause they went to one park. I have gone to the 4 parks in one day. BTW epcot is not one of my favorite but still I can help it but to go just for mission space and test drive.
MGM: rock and roller coaster is a must and also the twilight zone tower of terror. Then On Animal kingdom: The dinosaur crazy coaster, dinosaur, kali river rapids (unfourtanelty close!!) and of course the new addition everest!!! and Magic Kingdom: space mountain, splash mountain, big mountain railroad, ok alll!!! LOL.
So Both parks you are deciding between are lacking of the WOW factor!!

If I had to pick one and I was a fan of roller coasters... I'd pick Disney/MGM..... just for the Rock 'N Roller COaster alone. Everest is fun but Rock-N-Roll is better, add in Tower, Fantasmic, the Stunt Show...... The Safari at Animal Kingdom is cool.... but for a whole Day MGM is better.

Well...I love them all, but if I could only go to one, it would be Magic Kingdom. (But not on a Saturday, and preferably not in the summer months when the crowds are heaviest!)
Rock-n-RollerCoaster is at MGM
Expedition Everest is at Animal Kingdom.

Both rides/attractions you mentioned are located at disney but at two different parks. Try MGM studios though as they have more thrill type rides and are smaller so may be best for a large group of people.

Go to Mgm studios this one rockin roller coaster you will like this park. It has many exciting shows and rides. Like fantasmic.

I like MGM best. But it seems to me you love roller coasters. May I suggest you to skip Disney and go to Universal Studio's Adventure Island.
