first and simplest option is to adjust the idle speed

Idling speed or fuel mix out of spec, when you depress the clutch pedal the engine will slow down slightly due to the pressure plate tension. Try upping the idle speed slightly and see if it still stalls, most smaller engined cars will suffer a drop in r.p.m when the clutch is depressed, look at the tacho' next time you use the clutch, and check out the rpm when released.

yes it will stall if you dont press down on the clutch when your at a full stop and yes you need to use the clutch to start moving again. well technically if you stalled the car and turned the key in first gear without stepping on the clutch it would start moving again jerkying forward and generally moving in a spaz like mannor. The car would have to be very old since most all cars i can think of in the last 20 years or so require you to step on the clutch before the car will start. And yes If you brake to a sudden stop in any gear without the clutch engaged you will stall.

Vacuum leak?
Listen for a hissing noise under the hood, and look around for a small vacuum hose that may have come off the intake manifold.

not fench and pug is it? mine used to do that, i had a 106 it went on the machine and every thing and they couldnt figue it out, turned out it was the induction filter the owner b4 put one, i replaced it with stantard air box and was fine,
My advice would be to try the cheapest things 1st, you never know.

Idle speed too low. Dirty spark plugs. Dirty fuel filter. Dirty air filter. Intermittent fuel pump. ~

could be your fuel injector(s) and/or pump, there might not be enough fuel getting through!
