Actually, it depends on how you intend to use the Extra Sharp Cheddar. It would be great for snacking with crackers in the evening.

I think extra sharp is just a tad too strong. Regular sharp is best.

I am a cheese head from Wisconsin but i really don't know. My favorite is Muenster, its very good on hamburgers, chicken sandwiches etc.

Well that's a personal preference. I like it for mac and cheese..its the best. Its great with many things you need cheese for, like casseroles, pizza, roasted tomatoes...etc.
