The other day the San Francisco Giants had to use a pitcher in the outfield and had only 2 starting pitchers left on the bench. I was wondering if any team has forfeited a game because there were no more players available.

There have been 139 forfeits in major league history, but none occurred due to a lack of players. Here's a complete list, which also gives an explanation for each forfeit:

Unlike basketball, where you can continue playing with fewer than five players on the court, baseball requires you to have nine men in the field. Here is rule 4.17:

"A game shall be forfeited to the opposing team when a team is unable or refuses to place nine players on the field."
