Nowadays these dances are part of International Ballroom. They are danced at social ballroom parties and at ballroom competitions.
The style is like I said International Ballroom, also called Modern Ballroom.
Slightly different versions of Waltz and Foxtrot are part of American Ballroom; Quickstep didn't make the official list for some reason. Peabody is there instead of Quickstep, but it is not as common.
Waltz originated in England, Foxtrot and Quickstep are from America. Foxtrot and Quickstep didn't used to be separate dances. If you listen to the music is actually sounds very similar, only Quickstep is faster.
As for musical instruments, there is great variety that can be used. Typically, Foxtrot and quickstep makes me think of a jazz band. Waltz makes me think of an orchestra.
