I know you ask about "besides the WDW parks" , but consider doing the "around the world" tour at EPCOT. You learn to ride a SEGWAY people transporter, and then you ride around the world showcase before it is open to the public. It is $80.00 plus park admission, but it is a LOT of fun and something very different.

leu gardens is nice... once a month, you can watch a movie in the gardens and bring wine and a blanket.

you can get a canoe in the wekiva state park... or go to blue springs and get an innertube and ride down teh springs.

tons of stuff to do on international drive.. you can do teh skive diving simulator thing - its like a big fan that blows you. sky venture.

animal kingdom is nice for nature too.
