Followed the 10 hour break in period as described in the manual to a T. Our dealer can't do the inspection and service till next week. Can we finally ride it full throttle? Or must we wait till the inspection and oil change.

It would be better to wait or just cjhange the oil yourself. The reason for it's importance is that all of the metal that was worn off of the various parts during the break in period are now in the lubricating oil. This oil needs to be removed so that the engine can recieve a fresh new batch of lube oil and so that the metal particles will not cause any additional wear to the internal components of the engine.
