There are several reasons why rabbits wiggle their noses.

Cooling off...Nose wiggling helps a rabbit's body to cool down when it's hot...the faster they breathe, the more hot air is expelled through the nose, and it acts as a sort of internal air conditioner. The faster the rabbit breathes, the more the nose wiggles.

More air intake...The faster a rabbit breathes, the more the nose wiggles...and the more the nose wiggles, the more the nostrils expand, allowing the rabbit to take in more air.

Stress....If a rabbit is stressed out or frightened (which can happen very easily), their pulse rate rises dramatically. With the rising pulse rate, breathing becomes more rapid, and once again the nose wiggles more to take in more air.

Defense....A rabbit on alert (watching for predators in the area) will wiggle its nose rapidly in an attempt to pick up the scent of the predator. Rabbits are prey animals, meaning they don't hunt other animals...other animals hunt them. So they are always on the watch for their enemies, and one of their best methods of defense is to be aware of any enemies in the area. Other methods of defense include an acute sense of hearing, speed and agility when being chased, 'thumping' on the ground to warn other rabbits that an enemy is nearby, and flashing their tails above their backs when running - a sort of warning flag, telling their bunny mates to run.
