For Bryce, depending on time, I'd recommend going to the viewpoints, especially Inspiration Point. The most popular trail is the Navajo Loop but you can hook into Queens Garden Trail. This will give you the main scope of the amphittheater of red rock.
As for Zion, it is run on a shuttle system so it may require more than one day as you must rely on these buses to get around. Of course this is in the traditional summer season. A quick hike is the Emerald Pools where you can see all or just one. I highly recommend hiking up Angels Landing. It is a hike full of switchbacks and towards the end you can use the chains to facilitate footing. It's safe and the views from the top are breathtaking. If you have even more time, The Narrows towards the end of the park are amazing as I'm told. You hike along the Virgin river through the canyon as it narrows almost into a slot canyon. Not recommended if inclement weather.
Lastly if you can not make it to Zion and are driving north on I-80 towards Salt Lake City, I recommend a little detour of the Kolob Canyons. It is an enclave branch of Zion that can only be reached by car off of that highway. Gives you a good taste of Zion if you can't actually make it there!

I've been to Bryce and loved the beauty of the canyons. I'd highly recommend following the below links to the National Park Service's sites covering both parks.
If you get to Bryce next week, you can join Bryce Canyon National Park's "Dark Rangers" and amateur astronomers from the Salt Lake Astronomical Society for a celebration of the night at their 7th Annual Astronomy Festival, June 13-17 2007

I wasn't much impressed with Zion, but Bryce is gorgeous, and you need to walk down a trail or two from the summit to appreciate it.

They are both majestic!!!!!! See everything. Walk or horseback the trails. If you are not up to that take a guided jeep tour. Even without those you can see so much from the highway just driving though the parks and pulling off at the scenic lookout points.
