As was mentioned, the Mequite rodeo is a great place to see cowboys, when it's in session.

During the rest of the year, just head on over to the stockyards in Ft. Worth. At Billy Bobs, you can see cowboys in their indoor rodeo nightly! Here's their link so you can see more.

According to "Best of Texas", two of the best Texas rodeos are:

The Mesquite Rodeo - one of the best pro rodeo.
Mesquite, Texas

Texas Ranch Roundup

Third weekend in August
Real ranch cowboys compete. Also includes dancing and cook-offs.

Both these rodeos are outside of Dallas.

Go out of dallas, you can go to the mesquite rodeo just east of dallas and that area is full of cowboys, then head out to fort worth for the rest of your time the stockyards will give you a good taste of ole time texas, they have wonderful texas BBQ restarants, great tours and historical museums of the old west, and billybobs is right there also. Fort worth is your best bet, as it is known as "cowtown" and the place where the "west begins"

Dallas for sure! although you probably wont find many cowboys in the heart of Dallas..( made thatmistake many years ago).you'll need to head to Ft. Worth or more remote towns along the way!
