Rocks are formed chemically when minerals fall out of solution, these chemical precipitates are sedimentary rocks called evaporites. A good example of an evaporite is halite (salt) which forms from evaporation of seawater in shallow seas and lakes.
The first choice is also sedimentary but is a clastic sedimentary rock
Volcanoes erupting produce igneous rocks
And the last one doesn't even sound like it changes the rock, except maybe by faulting.

plants and animals form calcium carbonate shells or structures. =MAYBE - are they making the calcium carbonate, or just getting it and using it from the environment?

minerals fall out of solution. =NO. Same minerals, just in different form.

volcanoes erupt. =MAYBE - different minerals are formed basesd on temperature, cooling, and other factors, but I don't know if different minerals are formed by some sort of reaction.

new rock layers split forming new rocks. = NO. same rocks and minerals, just different sizes.

Volcanoes erupt, that is a chemical reaction called Igneous rock formation, the first. The last would be Metamorphic the first and 2nd would also be igneous. There are no Sedimentary.

Yet another homework question...

The first two possibilities are best.

You should really consider doing the studying yourself, instead of looking for the easy way out, you will be a better person for it.
