If you've gone to the trouble of tearing the carb down to this point, then may I suggest investing in a kit. The kit comes with a schematic, accelerator pump, gaskets, & all the required adjustments are listed in detail.

You are in way over your head. The float needle seat is not adjustable. You must be talking about the air mixture screws. 1 1/2-2 turns out to start then it will need to be fine tuned.

Sounds like you've taken this carb. apart. Not a good thing on a quadrajet unless you are a seasoned specialist. I like them when they work right, that's all. My recommendation would be to drop it and order a Edelbrock. It isn't really an Edelbrock, it's a Weber with their name stamped in it. These are, in my opinion, the best carbs available. Very few rubber parts and extremely simple. You can overhaul these without taking them off of the intake. Good luck.
