Combination of factors.
1) He's a tweener. He was viewed as too small to play tight end, too slow to play reciever.
2) Small school - Hofstra
3) His college coaches didn't like him, and didn't really try to "sell him" to pro scouts.

Just a guess, but probably a number of things warranted NFL teams for rating him that low.
1. Small school (Hofstra)-nothing against small schools, but if a guy puts up big numbers too few scouts are swayed if the level of competition is weak.
2. Did he have just a good senior season? I have no idea what stats Colston had in his four years there, and don't know if he was a "one-hit wonder". It's not like we get Hofstra games shown here in Big Ten Country.
Of all the football positions, some really good receivers seem to be discovered in the lower rounds from the small schools. Some examples: Andre Reed (Kutztown), Largent (Tulsa), Joe Horn (Itawumba JC). It seems as though the Saints got extremely lucky and will reap the rewards.

Because nobody took him in the previous 6 rounds, that's the only reason to be a 7th rounder :D.
Well, seriously. Probably because as a 230lbs TE in college, scouts thought he would be too small to play TE in the NFL but too slow to play WR.
He was like the opposite of Shannon Sharpe, a WR in Savannah St. taken in the 7th round. He added some bulk and became statistically the best receiving TE in NFL history.
Another factor could be the offensive where he played that didn't allowed him to reach his potential.

He was a 7th round pick because scouts thought he was too slow, and too big to play WR. They also said he wasn't physical enough to play TE. Plus playing at a small college like hofstra doesn't really help your draft stock much either.

The scouts weren't sure if he could do what he does at the pro level. Guess they know now.
When you play football for a small team like Hofstra you don't normally get drafted very high unless you break some NCAA records or something.

The same reason Tom Brady was a 6th round pick, everybody over looked him because he didn't really do anything all that exciting in college.

if people knew that he was going to have the type of season that he was going to have, he would have been the first reciever selected. he was coming out of a small school, and he didn't do very well at the combine. but look at how he has turned out.

same reason tom brady was drafted in the 6th. you can never really tell who is going to excel in the NFL. that's just like asking why did ryan leaf go no. 2 overall in the draft?
