you are thinking of the notion that you can throw playing cards, no? well, a potato chip doesn't have an aerodynamic profile just like someone else said, but it also doesn't have a strog enough structure to hold up under the stress of flight. It's not like skipping rocks across a lake, either. Potato chips are just too brittle.
