Nicole .. first and foremost, get a bike that YOU feel comfortable on. Go out to some different bike shops in your area, take the time to find something not only you like but are going to be able to handle. There is nothing worse when someone that doesn't have much or any experience riding goes out and buys something that they can't handle because of weight and power. When you are sitting on the bike make sure that you have both feet flat on the ground, as you know tippy - toes don't count.
Your 5'3" and 120 pounds and if you've never rode or don't have much experience, I wouldn't go with any bike that's over 750cc. There is nothing wrong with getting a bike that is less than 750 cc's either. Hell a 250cc Rebel with your weight and height would be fine in my opinion, you can still keep up with most traffic and it would be easy to handle in most situations.
If you like sport bikes someone mentioned the 250cc Ninja, that may be an option for you. The Honda Shadow is a nice looking bike. As far as a Harley, an 883 Sportster is as low as your going to get where cc's are concerned. I think for someone such as yourself, that is only 5'3" a Sportster is going to be too damn high ... no clue why they make them that way. You can get them lowered but lose suspension when you do.
One more thing you might consider doing is taking a motorcycle safety course. Not only do most provide a bike for you to ride but if you complete the course you don't have to take the riding test when you get your license from the DMV. Also insurance companies tend to give you a break on your bike insurance as well.
Just remember pick something that matches your abilities right now ... you can always work your way up to that dream bike. Have fun Nicole and keep the rubber side down! Your going to love having your knee's in the breeze girl!

I'm a big proponent of learning to ride on the style of bike you want to be riding long term. In other words, if you like sport bikes get a sport bike, don't get a standard just because some people say they might be easier.
Without knowing what kind of bike you like most, it can be hard to give a good recommendation. The Ninja 250 would be a decent sport bike. If you like cruisers or standards you might want to look into the Honda Rebel or Honda Shadow. They are pretty easy to handle, have a lower ride height and are oftern used in MSF courses.
I think the main issue for many women first learning to ride is finding a motorcycle with a comfortable ride height. If you can only put one foot down, you have to support much more weight of the bike. It would probably be useful to go to a couple dealers and sit on the bikes to feel them out.
Ride Safe!

I am going to assume certain things about you (as a girl). Please don't be offended if I'm wrong.
===
I am assuming that your are not very tall and not very braunny. You want to look into smaller bikes. 500 cc or less are good started bikes. If you are not very tall you will need a bike with low seat height. Most street bikes have 32 inch seat height or higher. Buell Blast is one of the street bike with low seat height (I think 25 inch).
http://www.buell.com/en_us/bikes/blast/blast/features.asp#
It is division of Harley Davidson.
===
Also as options, low riders are ... low. They have seat heights of 25 to 29 inches.
How do I know these facts? I am only 5'3". I've owned and rode 3 bikes in my life. The most comfortable bike I've owned was my Kawaski Vulcan 500 (low rider) with 28 inch seat height. It is really a beautiful looking bike. But the technology is kind of dated (carb instead of fuel injection, etc.)

For a first bike the Honda Rebel 250 is hard to beat. If you want to go ahead and get one that you won't outgrow skill wise, get the Suzuki SV650. Different styles but popilar with females. Along with most any cruiser.

You need to start out with something like a 600cc. And as far as make you just have to find the one that fits you. I like Kawasaki myself. Great handling and power. And it comfortable for me to ride.

depends. how tall are you and whats your weight. you want to get a bike thats big and powerful enough to get you out of sticky road situations but small and light enough that you can manage to get it upright if it falls over.
