you have two hands... the idea is to open it with both so that it does not open at an angle and hurt the frame or rollers that are in the dresser.

The two most common reasons are that on long drawers with old style guides, it soon takes both hands to pull it out with out it binding.
On small drawers the most common reason is that once upon a time it had a single pull with two bolts, but when the pull was to be replaced, the spacing of the bolts was so odd only a limited number of pulls match it. (a particular one with 5.25 inch spacing comes only in variations - cheap or expensive - of one design.) So a person, rather than drilling new holes and trying to cover the old, buys a couple of knobs and mounts them individually in the holes.

Because sometimes when the wood swells the drawers are hard to slide in and out because they get stuck. And it can be a real pain. so there are two knobs to equalize the pressure on both sides to pull the drawers out.
