Urban legend: the words on Darth Vader's chestplate read "His deeds will not be forgiven, until he merits." His name also is supposed to mean "Dark Father," though that's pretty unconfirmed.

"Luke" means "light."

Anakin's last name was originally "Starkiller."
Luke was originally female before the concept of twin children was introduced.
Originally, Luke and Leia were not related.

The original version of "Return of the Jedi" is no longer considered canon: the re-released version with Hayden as the redeemed Anakin is.
"Return of the Jedi" was originally "Revenge of the Jedi," until it was decided that revenge is not a Jedi trait.
The title of the last movie can be taken in two ways: Luke has brought the Jedi back to the galaxy or that Anakin Skywalker has returned to the light and therefore the Jedi.

In Star Wars IV "A New Hope", just after Darth Vader Kills Obi Wan Kenobi, onboard the Death Starm, his light sabre changes color to white, instead of red.
