If you are referring to the person who actually 'cuts people up' to establish the cause of death then they are called a pathologist.

Morticians are the people who prepare the bodies and look after them while they are at the mortuary.

Morticians work in a mortuary and take care of the body, aswell as being a funeral director.
Coroners are the ones who perform autopsies to find out the cause of the death if it is not already known.
An Undertaker is another word for a mortician, they perform the same duty.

A mortician works in a mortuary. I do not know about " chopping people up ". Perhaps you mean pathologist, or coroner

A person who works in a mortuary is called an undertaker. A person who chops people up is called a psycho killer. Or a reconstructive surgeon.
