I can't believe no one's mentioned these, but they probably will by the time I finish typing: the figure four leg lock & the sleeper hold. Unfortunately, I have to admit I have been in real altercations where I have resorted to such moves to turn the balance or to merely ensure my safety. I highly recommend against trying them if you don't know what you're doing, because they can easily be done the "wrong" way to intentionally inflict injury.
Most of the other moves are pretty good, too. The Scorpion Deathlock works well, as I allowed a friend to put me in one for practice as a kid, & it really puts the pressure on the back. The Boston crab also works well for the same reason. Various armbars are also good submissions, especially the Fujiwara version. The full nelson is another favorite of mine if you just need to subdue someone without hurting them. Check out some of the moves I provided.
Oh, & for the person who said "STFU", please drop the Cena-isms. Cena is an idiot who likes to try to make every move he can actually learn sound vulgar. The move is really called an STS (Stepover Toehold Sleeper), & is a version of the STF (Stepover Toehold Facelock). Cena just renames it to prove his stupidity.

Just remember this, if you apply, you need to know how much pressure to put on and when to release as there could be some serious ramifications resulting from the manuver you are attempting. Also, for every offense, there is a defense, every defense, there is an offense. Be careful.

A rear naked choke:
The rear naked choke (often abbreviated RNC) is a chokehold in martial arts applied from an opponent's back. Depending on the context, the term may refer to one of two variations of the technique. Either arm can be used to apply the choke in both cases.
The term rear naked choke likely originated from the technique in Jiujitsu and Judo known as the "Hadaka Jime," or "Naked Strangle." The word "naked" in this context suggests that, unlike other strangulation techniques found in Jiujitsu/Judo, this hold does not require the use of a keikogi ("gi") or training uniform.
The choke has two variations[1]: in one version, the attacker's arm encircles the opponent's neck and then grabs his own biceps on the other arm (see below for details); in the second version, the attacker clasps his hands together instead after encircling the opponent's neck.
We'll focus on the real version. This variation has the supporting hand clasp the hand of the choking arm, allowing more pressure to be applied to the neck, but losing some of the control of the head. This alters the choke somewhat so that it is more likely to be applied as an airway-restricting choke or mixed blood and air choke, which results in more pain but a slower choke-out. As such, this technique is less frequently used at advanced levels in Judo[3]. Nonetheless, it has seen some successful applications in mixed martial arts competition: for instance, it was used by Fedor Emelianenko, a heavyweight champion in PRIDE, to defeat Kazuyuki Fujita at the PRIDE 26 event in 2003. Fujita tapped out about five seconds after the choke was applied. It was also used by UFC fighter Matt Hughes to defeat Frank Trigg in their second fight which was transitioned from a hand-on-biceps version of the RNC.

Dragon Sleeper - Approach person from behind then grab the persons head, put your arm around their throat. Then apply pressure - you can do more by applying a reverse body scissors to make their whole body useless. This move is designed to crush an opponent and IT WORKS (even in a fight)
