Stanley Cup is in sections, so when there is no more room to engrave names, they take of a ring which gets displayed in the Hockey Hall of Fame in Toronto.

The oldest ring is removed and a new one is added at the bottom, keeping the total of 5 rings. The ring that is removed is them put in the hockey Hall of Fame in Toronto.
My question addition is this - I went to the Hockey Hall of Fame 2 weeks ago, and they told us there are 2 Cups (actually 3, but the original Cup doesn't count in this question, is it is in a vault display) - one on display there, and one that was presented to the teams. Do they engrave both? If so, how do they make it so people that go can go and take their picture with the Cup, like my fiancee and I did?

One of the rings is removed and placed in the Hall of Fame, and a new, blank ring is put on to begin engraving all over again.
The oldest ring is the ring removed, and added to the Hall, and the blank one is put on the bottom (this is to keep the cup at the same height). 13 teams are on each ring with the exception of one (I believe it's only one...)

And Kaotik, no, there is only one true Cup, the others are actually replicas that are used for display. The actual Cup is usually only at the Hall for a couple of weeks in the year, because most of the year it travels with the winners of the Cup, or to various public displays. The one you usually see at the Hall though is a replica (which they do also engrave).

They remove the top ring, which is the oldest, flatten it and put it in the Hall of fame, and add a blank ring at the bottom. Each ring holds 13 teams, except one, which had 12 because the Habs went over their size limit and they had to skip a slot.
they have had to remove 2 rings to date, one of them just last year. The current bottom ring has two engravings, 2004-2005 "SEASON NOT PLAYED" and 2005-2006 Carolina Hurricanes. The Ducks will be added after everyone's had their day with the cup.

the cup stays the same but the large base of it is sectional when it fills up a ring is removed and put into the hockey hall of fame in Toronto

They remove one of the silver rings just like peeling a label from a can, and begin engraving again. Put it on when it's finished just like the others were.
